Amazing Pumpkin Waffles with Buttermilk Syrup

Today is Rebekah's birthday and we tried a new recipe for a special birthday breakfast. They are truly holiday waffles as you will see by the ingredients! But everyone needs to celebrate every once in awhile. Especially when we have a Rebekah in our lives!!! Happy Birthday Becks!

Pumpkin Waffles

2 1/2 cups flour
1/3 cup brown sugar
2 1/4 tsp. baking powder
1 tsp. soda
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. ginger
1/4 tsp. cloves
4 eggs separated
2 cups buttermilk
1 cup pumpkin
6 Tbls. melted butter

Sift dry ingredients. Mix egg yolks and rest of the wet ingredients until smooth. Add dry ingredients to wet and stir just until smooth. Beat egg whites until soft peaks form. Gently fold into waffle batter. Bake in waffle iron. Smother with buttermilk syrup!

Buttermilk Syrup

1 1/2 cups sugar
3/4 cup buttermilk
1/2 cup butter
2 Tbls. corn syrup
1 tsp. baking soda
2 tsp.vanilla

Place all ingredients except vanilla in large saucepan (mixture will foam so it needs to be large)
Bring to boil and boil, stirring constantly for 4 minutes
Remove from heat and stir in vanilla extract.
ENJOY!
