Amazing Pumpkin Waffles with Buttermilk Syrup
Today is Rebekah's birthday and we tried a new recipe for a special birthday breakfast. They are truly holiday waffles as you will see by the ingredients! But everyone needs to celebrate every once in awhile. Especially when we have a Rebekah in our lives!!! Happy Birthday Becks!
Pumpkin Waffles
2 1/2 cups flour
1/3 cup brown sugar
2 1/4 tsp. baking powder
1 tsp. soda
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. ginger
1/4 tsp. cloves
4 eggs separated
2 cups buttermilk
1 cup pumpkin
6 Tbls. melted butter
Sift dry ingredients. Mix egg yolks and rest of the wet ingredients until smooth. Add dry ingredients to wet and stir just until smooth. Beat egg whites until soft peaks form. Gently fold into waffle batter. Bake in waffle iron. Smother with buttermilk syrup!

3/4 cup buttermilk
1/2 cup butter
2 Tbls. corn syrup
1 tsp. baking soda
2 tsp.vanilla
Place all ingredients except vanilla in large saucepan (mixture will foam so it needs to be large)
Bring to boil and boil, stirring constantly for 4 minutes
Remove from heat and stir in vanilla extract.
ENJOY!

Which is our Witch?
I was in Hyrum on Halloween and saw something I don't see in Enumclaw! Dancing around a bonfire were several wart covered, pointy hat and toed, cackling witches! The little trick or treaters were not too sure if they dared venture near, but when they did they were served hot dogs and home made witches brew (rootbeer). To our horror we learned that one of the witches was indeed a relative! Can you guess which one and who she is?
Naches Loop in Winter
Most days this time of year in western Washington are gray and rainy. But today was gorgeous -- sunny and clear with bluebird skies. One must take advantage of a day like this. So Kim Judd, a new member of our ward, (Rosie had a meeting and was unavailable) and I headed to Mount Rainier National Park for an unforgettable afternoon.
One of our family's favorite hikes in Washington is the Naches Loop trail. It is an easy five mile hike at the summit of Chinook Pass with a gorgeous view every step of the way. In summer it has the best wildflowers meadows I have ever seen. It is the hike we usually take to introduce visitors and friends to the magic of Mount Rainier. But I had never hiked it in the winter and wanted to see what wonders it would hold in the snow and ice.
Here is what I found -- truly breathtaking. The white gray and blue were stunningly beautiful.
As a contrast, this was taken from virtually the same spot in August.
Part of the trail goes along a ridge that has a wonderful view of Dewey Lake and surrounding peaks.
We even found a frozen waterfall
Chinook pass is also one of my favorite climbs on my bike. In the lower right you can see the road as it cuts its way through the mountain. In the upper right is Sunrise, one of the most beautiful spots on God's earth.
Days like today make up for those gray days that are such a big part of Seattle this time of year. I wish you all could have joined me.
